Lots of fresh ginger, lots of fresh squeezed lemon, this tea cake is two layers of semolina ginger cake with a layer of lemon quark between them. Topped with pistachios and a wildflower honey glaze. 6-8 servings. Pairs excellently with hot drinks, particularly flower based herb teas.

Caramelized pears baked around a rich cardamom spice cake. 6-8 servings. Paired with a warm drink on a cold morning or heated briefly and served with a small scoop of vanilla ice cream this cake is as heavenly as the impression of wings made by the pears might suggest.

A layer of mushroom infused quark under a layer of eggs, fresh basil and fresh ground black pepper, under a layer of leeks and olive oil, baked in a thin pastry shell.
