Einkorn is one of the world’s oldest cultivated wheats, an ancient grain that has remained remarkably close to its original form for thousands of years. Freshly milled to order from regenerative and organic grain, its golden color and naturally nutty, slightly sweet flavor make it unmistakably distinctive.
Einkorn has a delicate gluten structure, so it benefits from gentle mixing and careful handling. The result is a tender crumb and a beautifully delicate texture. It is also naturally rich in nutrients and has less phytic acid than modern wheat, making it a grain easier to digest for many people, but not suggested for those with Celiac.
Best for: cookies, pancakes, pie crusts, muffins, and quick breads. It can also be used for sourdough and yeasted breads.
Because freshly milled flour contains the entire grain, including the natural oils from the germ and bran, store it in the refrigerator or freezer until ready to use. This helps preserve its freshness, flavor, and nutritional quality.
How to Bake with Cold Flour
Cold flour can affect dough temperature, so keep these tips in mind for the best baking results:
- For Yeast & Sourdough: Bring the flour to room temperature before mixing, or use warmer liquid. Cold flour can slow yeast activity and delay the rise.
- For Pastries, Pies & Biscuits: Use flour straight from the freezer. Ice-cold flour helps keep the butter solid, creating a flakier crust.
- For Cakes, Cookies & Quick Breads: Let the flour come to room temperature first. If your cookie recipe uses cold butter, as many of mine do, cold flour works beautifully.
