Einkorn Flour (Ancient Grain) - 2 lbs.

Local pickup orders will be milled before the scheduled pickup time. Orders received over the weekend will be milled and shipped the following Monday.

Einkorn is one of the world’s oldest cultivated wheats, an ancient grain that has remained remarkably close to its original form for thousands of years. Freshly milled to order from regenerative and organic grain, its golden color and naturally nutty, slightly sweet flavor make it unmistakably distinctive.

Einkorn has a delicate gluten structure, so it benefits from gentle mixing and careful handling. The result is a tender crumb and a beautifully delicate texture. It is also naturally rich in nutrients and has less phytic acid than modern wheat, making it a grain easier to digest for many people, but not suggested for those with Celiac.

Best for: cookies, pancakes, pie crusts, muffins, and quick breads. It can also be used for sourdough and yeasted breads.

Because freshly milled flour contains the entire grain, including the natural oils from the germ and bran, store it in the refrigerator or freezer until ready to use. This helps preserve its freshness, flavor, and nutritional quality.

How to Bake with Cold Flour

Cold flour can affect dough temperature, so keep these tips in mind for the best baking results:

  • For Yeast & Sourdough: Bring the flour to room temperature before mixing, or use warmer liquid. Cold flour can slow yeast activity and delay the rise.
  • For Pastries, Pies & Biscuits: Use flour straight from the freezer. Ice-cold flour helps keep the butter solid, creating a flakier crust.
  • For Cakes, Cookies & Quick Breads: Let the flour come to room temperature first. If your cookie recipe uses cold butter, as many of mine do, cold flour works beautifully.

Each bag of Einkorn Flour includes a recipe so you can put your freshly milled flour to use right away.

Spelt Flour (Ancient Grain) - 2 lbs.

Local pickup orders will be milled before the scheduled pickup time. Orders received over the weekend will be milled and shipped the following Monday.

Spelt is an ancient heirloom wheat with a naturally sweet, subtly nutty flavor and a tender texture. Freshly milled to order from regenerative and organic grain, it brings a distinctive character to everything from everyday bread to delicate pastries.

Its gluten structure is more delicate than modern wheat, and is often considered a more digestible grain. Spelt absorbs water differently, so adjusting hydration allows the flour to develop properly without overworking the dough. The result is a tender, flavorful bake with the unmistakable character of spelt.

Best for: breads, muffins, pancakes, pizza dough, and pastries. It can also be used for sourdough and yeasted breads.

Because freshly milled flour contains the entire grain, including the natural oils from the germ and bran, store it in the refrigerator or freezer until ready to use. This helps preserve its freshness, flavor, and nutritional quality.

Carolyn's Freshly Milled & Baked Goods are Super Delicious and Super Good for You! I ordered three items: the Sourdough Sandwich Loaf, Sourdough English Muffins, and Chocolate Hazelnut Spread. All were so delicious! I love to toast two slices of the Sourdough Sandwich Loaf to make a delicious hummus veggie sandwich. The bread is hearty and has such a wonderful sourdough flavor. The Sourdough English Muffins are heavenly! I love them toasted with some of Carolyn's Chocolate Hazelnut Spread or some all fruit strawberry jam. The English muffins have such a wonderful texture and just the right amount of delightful chewiness. As someone who has been a grateful recipient of Carolyn's health coaching, I know that Carolyn is not only concerned about making food that is delicious, but also nourishing. Carolyn mills her flour just before baking, "so every loaf and treat starts with the full nutrition of the whole grain, bran, germ, and endosperm all intact.” This is food made with love!

Oatmeal Raisin Cookies… soft, moist, rich! Marvin loves the oatmeal cookies! He went on and on about how moist and soft they were! He said you can taste the oatmeal in them and you can tell they were made from healthy ingredients! When I told him they were! He was sold! lol!😂 Most morning I have oatmeal for breakfast, so I decided to have one of your oatmeal cookies! Carolyn, Marvin was right! They are soft, moist, rich, and the sweetener is just right!
