About Gest Desserts
I have had a sweet tooth my whole life. My passion for desserts even led me to professional chocolate-making and pastry courses between changing day-jobs. My friends all call me a pastry snob because I refuse to eat store-bought cupcakes. But during two pregnancies with gestational diabetes, I was limited to a quarter of a chocolate chip cookie or a few, measured bite of cheesecake. I couldn't even have two spoonfuls of ice cream without my blood sugar spiking. When I looked online, all there was were "cookies" that tasted like cardboard or bars that don't taste anything like real dessert. Finding high-quality, gestational diabetes-safe treats that actually tasted like real dessert felt impossible, so I stepped back into the kitchen to create my own. My pregnancies are behind me now, but I haven't forgotten that longing. I founded Gest Desserts so you never have to choose between the health of your baby and the genuine joy of a delicious, artisan-made pastry.

Frequently Asked Questions
First of all, these treats are designed not to cause a strong elevation in blood glucose levels, something that people with diabetes need to monitor. We do this by avoiding simple carbohydrates and swapping them out with complex carbohydrates with more fiber and protein. In addition, gestational diabetes occurs during pregnancy, which means that there are additional dietary restrictions and cautions to take, such as reducing salmonella risk by finding replacements for raw eggs, cooking egg-based ingredients to a safe temperature, limiting the amount of caffeine in recipes by swapping for decaf ingredients when possible, and more! Each substitution requires thoughtful testing in the kitchen to make sure that the outcome still tastes as good as possible.
Ingredients used for gestational-friendly treats are substantially more expensive than regular baking ingredients. For example, almond flour is 16 times more expensive than regular all-purpose flour, pecan flour is 27 times more expensive than regular all-purpose flour, and sugars that don't raise blood sugar and also bakes well are approximately 20 times more expensive than regular table sugar. Also, because there's no gluten in almond flour, to create a similar texture to regular cakes, we use high quality egg protein powder.
