What are the benefits of Fresh-milled flour? Fresh-milled flour offers improved digestion, better flavor, absence of additives or preservatives, higher vitamin and mineral content, and provides both soluble and insoluble fiber. It also contains 40/44 of the natural essential nutrients we need compared to commercial flour which contains only 20 with 5 synthetic nutrients usually added back in.
The Appearance and Texture Of Fresh-milled Baked Goods Will Be Different Many people expect fresh-milled flour bread to have the same light, airy crumb as white flour loaves, but that isn’t realistic. The bran in fresh-milled flour cuts through gluten, limiting rise and oven spring, creating a denser texture. While some pre-baking techniques can help, it will never fully match store-bought or white flour bread. That said, the exceptional flavor, nutrition, and soft, chewy texture are a trade-off I’m happy to make when choosing fresh-milled bread—and I hope you feel the same.
