About Welcome Back Baked Goods
I'm Rita Koontz, sole proprietor of a Texas Cottage Food Operation called Welcome Back Baked Goods. I sell gluten-free baked goods, including hot and cold desserts. I began my gluten-free journey nearly a decade ago, amidst chronic health issues. I was later diagnosed with AS, Endometriosis, a class II wheat allergy, and suspected Celiac Disease, based on autoimmune reactions to wheat/gluten when ingested. When I first cut all wheat and gluten products from my diet, I was overwhelmed and sad. My husband was my main support and took on the challenge to help me cook gluten-free in our home. Over time, we figured out many dupes for the foods I missed, but I couldn't readily find certain desserts in stores or restaurants. So I got to work! I started this business to share treats with others who have been missing out. Whether you are allergic to wheat, have Celiac Disease or a gluten intolerance, or abstain to reduce inflammation from autoimmune disorders, welcome back to decadence!

Frequently Asked Questions
I use ingredients which are labeled as gluten-free and check their labels regularly to ensure there are no traces of wheat, where they have been manufactured. I have personally tried every product I use in baking, and I only use products which have never given me a reaction. As I am extremely sensitive to cross-contamination (with a wheat allergy and suspected Celiac Disease), I use the ingredients I trust the most. However, I can make no guarantees for others' sensitivities or allergies. I clearly label if my products contain any of the 8 major food allergens on every product. Please consume at your own risk.
My home kitchen is not 100% gluten-free, as my family is able to eat gluten. My home oven is used to bake gluten-containing items. However, I do not bake gluten-containing items in the oven at the same time as gluten-free items. My family only uses the bottom rack to bake gluten-containing items, so that gluten does not fall onto a lower rack. It is not a convection oven, so gluten-containing food particles do not circulate by fan. I have never been cross-contaminated by my home oven. While I can't make any guarantees, I do everything possible to prevent cross-contamination while baking and use the same standard of care and precaution as I would for my own gluten-free food preparation. Please see more details under the cross-contamination FAQ.
Before baking anything gluten-free in my home kitchen, I clean my counters with soap and water and sanitize them with a food-safe sanitizer. I wash bowls, utensils, mixing equipment, and measuring cups just before using them as an extra precaution. Once cleaned, no wheat or gluten-containing food items are prepared in my kitchen, until I have safely packaged and stored the gluten-free baked goods. I wash my hands often and wear vinyl food-safe gloves during preparation. While I can't make any guarantees, I do everything possible to prevent cross-contamination while baking and use the same standard of care and precaution as I would for my own gluten-free food preparation.
